Using Pods & Seeds
Compare using whole seeds and pods, to using freshly ground coffee beans. When first ground or crushed they release distinctive flavors from their essential oils. These flavor oils dissipates when exposed to air. Although some seeds and pods are used whole, most perform best when crushed or ground. Crushing can be done using a heavy knife and cutting board. An easier method is using a mortar and pestle to grind them. This works with most spices and also develops the flavor of herb seasonings. Very hard spices require a grinder, either coffee or spice.
