Cardamom Rice:
Cook rice per package directions but include one cardamom pod and one clove per cup of rice. Optional - also add two strings of saffron. This is a nice side dish for meats. It is also good served my mother's old-fashioned way topped with butter, brown sugar and cinnamon

Cardamom Pods
Both pod and seed of whole green cardamom are flavorful and very aromatic. It is a warm, sweet spice used in both sweet and savory Indian and Scandinavian cooking. Many pilafs, curries and other hot dishes call for cardamom to be added whole. It slowly infuses the dish and the shell disintegrates as it cooks. It is a Scandinavian flavoring for puddings, custards and baked goods. I especially like its flavor when added to fruitcake or fruit compotes.
When making Arabic coffee, a whole bean can be added to the drink as it steeps. This is an indication of high esteem for the guest.
Cardamom seeds are also a very aromatic addition to potpourri.
