Cinnamon
Cinnamon has a warm, sweet flavor and is very fragrant. The stick form, or
'quill', is strips of bark rolled one in another. In cooking and baking it
is more often used in powdered form, however powdered looses its flavor more
quickly. Use a freshly broken stick to flavor cooked sauces or marinade where
it will be removed before serving. Use in mulling spices or pickles where
you do not want the liquid clouded with cinnamon powder. They also add a subtle
Cinnamon flavor when used as "stirrers" in not chocolate, mulled
cider or wine and hot teas. Make a Cinnamon infusion by adding the sticks
to a bottle of flavoring extract, like vanilla, or liquor such as brandy or
rum and leaving them to steep. This can be used in dessert sauces. Add fresh
Cinnamon sticks and a bit of brandy to potpourri to give it new life. Combined
with citrus or cranberry, they make a fragrant holiday decoration.
