About Cloves
Cloves are sweetly pungent, with a warm, strong fragrance. Ground, they are often combined with Cinnamon, Nutmeg and sometimes ginger to flavor pies, bread, rice and puddings. Cloves are easily overpowering so use them sparingly. Their strong flavor enhances wild game, especially venison. They are also part of Worcestershire sauce flavoring. Hams and pork can be "studded" with the whole cloves, pushing in the "nail" end. Studded onions are used to flavor stocks and sauces. Whole cloves are also used in pickles, mulling spices and potpourri. Oranges studded with cloves and then dried are a popular holiday aromatic. The hard, whole cloves are easily ground with a coffee grinder.
Cloves are an antiseptic and mild anesthetic, often used for toothaches. It sometimes helps for treating nausea, indigestion and dyspepsia
