seeds have a mildly sweet and warm flavor with a citrus undertone. The easily
crushed seed can be used generously to flavor curries, meats, soups and stews.
They blend well with smoked meats, fish, sausages and game. Crushed seeds
make a crispy and flavorful coating for grilled chicken and fish by rubbing
into the scored meat. Versatile Coriander also blends well in cakes, breads,
fruit dishes and puddings. It also compliments chilies and peppers. Try adding
it to cottage cheese or cheese balls. Pan-roasting the seeds before using
enhances flavor. Young Coriander plant leaves are known as Cilantro, commonly
used in many Mexican and tomato dishes. Coriander seed is a prominent seasoning
in Middle East and Asian cooking.
